Wilderness Trail Distillery will roll out a new four-grain, 6 year old bourbon that will help raise money for families impacted by cancer.

The 110 proof bourbon will be sold during the Dec. 10-11 open house event at the distillery.

Wilderness Trail’s mashbills typically use three grains: corn, barley and rye or corn, barley and wheat, per an announcement. This expression uses all four.

How it happened is this: In October 2015, Master Distiller Shane Baker and his team were making a seasonal changeover from rye small grain production to wheat. As the grain bin was being purged to accept  the wheat crop, the distillers noticed they were a little short to set a full fermenter with a regular mash bill. So, they added rye to create Wilderness Trail’s first ever four-grain Bourbon whiskey, with a mashbill of 12% wheat for a mash bill of 64% corn, 12% rye, 12% wheat and 12% malted barley.

Only a few barrels were made with this mashbill, so the bourbon will be limited. However, the distillery said more will be produced and it will be widely available once it matures.

Another distinction of this release is the hot pink label design. With Wilderness Trail’s cancer charity, it has paid overdue bills, bought meals for families, and set up college funds for surviving children. Proceeds from this special release will be offered to more families over the holidays this year.

The bourbon will cost $250 per bottle, with a maximum of six per person, as only 165 bottles are available. In addition, a second special release will be available at the open house: a 105 proof rye whiskey that was especially chosen for the holiday open house. For fans of the wheated bourbon, they will have some cask strength of the yellow label for sale as well. The wheated Bourbon will be 116 or 117 proof.
