Laws Whiskey House Revives Honey, Cognac Expressions
Colorado-based Laws Whiskey House announced the return of two popular limited edition offerings: the Honey Cask Finished Straight Bourbon Whiskey and the Four Grain Bourbon Whiskey finished in a Cognac Foeder.
Each expression begins with Laws’s signature Four Grain Straight Bourbon, then undergoes a specialized aging process that unlocks unique, one-of-a-kind tasting notes.
“These Specialty Finishes are a true reflection of Colorado—the flavors, the climate, the grains, and the care that goes into every step,” Al Laws, founder and president of Laws Whiskey House, said in a news release. “These annual releases are all about pushing boundaries and celebrating the unique story of every ingredient and barrel. The Honey Cask Finish showcases local honey that supports Colorado’s biodiversity, adding a sweetness you won’t find anywhere else.
“The Cognac Foeder Finish offers a different take on Colorado’s character: Denver is located in a high-elevation desert, meaning the climate is dry, has large temperature swings, and big barometric pressure changes with storm cycles. These conditions, when combined with the solera method, help to create a rich, evolving complexity that deepens with each passing year.”
Honey Cask Finished Straight Bourbon Whiskey
This buzzy bourbon redefines “terroir-driven” with the unique influence of local pollinators. Bee Squared Apiaries, a Colorado-based small-scale beekeeper, fills barrels previously used to age Four Grain Straight Bourbon with raw, unprocessed honey, blending it with bourbon remnants and char while coating the barrel’s interior.
The barrels are filled again with Four Grain Straight Bourbon for a second round of aging, resulting in a delicate layer of sweetness that enhances the flavors of black tea, orange blossom, and Rocky Mountain strawberries. This harmonious collaboration beautifully expresses Colorado’s terroir, captured not only through the heirloom grains that define Laws but also in the natural artistry of its pollinators, with honey that reflects the distinctive floral profile of Colorado’s wildflowers and high-altitude plants.
Four Grain Bourbon Whiskey finished in a Cognac Foeder
This is the fourth annual release of this beloved series, carrying the legacy of years past through the time-honored solera maturation method. Starting with Laws’s flagship Four Grain Bourbon, the well-aged whiskey migrates to various-sized Cognac casks, adding flavors and complexity from the French oak. These casks are then married in a 50-year-old 1,600-gallon Cognac foeder for secondary solera-style aging, creating a complex spirit with bright, upfront bourbon flavor followed by nuanced notes of stewed fruit and black tea on the nose with flavors of spiced apple butter, toasted wood, and raisin leading to a luxurious, rich finish.
